  • 1 cup salted butter
  • 3/4 cup Dutch-processed cocoa powder
  • 1/2 cup Pyure Brown Sugar
  • 1 1/2 cups Pyure Granulated Sweetener
  • 2 teaspoons instant espresso powder
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 1 egg yolk
  • 10 ounces bittersweet or semisweet chocolate chips (or chopped chocolate bar) (use sugar-free version if you'd like the brownies to be sugar-free)

Mint Icing

  • 2 cups Pyure Powdered Sweetener
  • 4 tablespoons salted butter, room temperature
  • 1 1/2 teaspoons peppermint extract
  • 2 tablespoons milk or heavy cream, room temperature
  • Melted chocolate for drizzling (optional)

Directions

Brownies

  1. Preheat the oven to 350°F. Line an 8x8 (for thicker brownies) or 9x9 (for thinner brownies) pan with parchment paper and lightly grease with oil.
  2. Melt the butter on the stove or in the microwave and let it cool slightly.
  3. In a large mixing bowl, whisk together the flour, Pyure Granulated Sweetener, Pyure Brown Sweetener, cocoa powder, and espresso powder.
  4. Add the melted butter, eggs, egg yolk, and vanilla extract. Whisk until smooth and well combined.
  5. Fold in the chocolate chips and pour the batter into the prepared pan.
  6. Bake for 32-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. For a denser texture, bake for an additional 5 minutes.

Mint Icing

  1. In a mixing bowl, whip the butter until light and fluffy.
  2. Add the peppermint extract, milk, and powdered sweetener. Start mixing on low speed, then gradually increase speed until smooth and well combined. For a thinner consistency, add more milk.
  3. Once the brownies have cooled, spread the icing evenly over the top. If desired, drizzle with melted chocolate for a finishing touch.

These mint brownies are rich, decadent, festive, and full of flavor. Whether you're making them for a special occasion or just because, they're sure to be a hit. Enjoy every bite.
