Ingredient's You'll Need
For the keto strawberry cupcakes:
3 eggs
½ cup Pyure Granulated Sweetener
⅓ cup unsweetened almond milk (or milk of your choice)
1-2 squeezes Pyure Simply Sweet- Vanilla
2 ½ cups almond flour
2 teaspoons baking powder
2 teaspoons vanilla extract
1 teaspoon almond extract
For the keto chocolate frosting:
8oz cream cheese, softened
4 tablespoons butter, softened
2 tablespoons heavy cream
2 tablespoons cocoa powder
⅓ cup Pyure Powdered Sweetener
1-2 squeezes Pyure Simply Sweet- Vanilla
For the chocolate covered strawberries (garnish, optional):
6-12 strawberries
2 teaspoons coconut oil
6 oz chocolate (milk, semi-sweet or dark works here)
How to Make Them:
Step 1: Make the Cupcakes

Preheat oven to 350F, and line a cupcake pan with cupcake liners.

Mix eggs, granulated sweetener, almond milk, and extracts together until smooth.

Stir in baking powder and almond flour, stirring gently to avoid lumps.

Using an ice-cream scoop, scoop batter into 12 cupcake liners and bake for 22-25 minutes.

Let cool for 10 minutes in the cupcake pan, then cool completely on a wire rack.
Step 2: Make the Chocolate Frosting
Beat the cream cheese and butter until smooth, then add the cream, Simply Sweet Vanilla, and cocoa powder and beat until smooth. Add the powdered sweetener and beat until smooth and fluffy. Set aside until ready to frost!
Step 3: Make the Chocolate Covered Strawberries
In a double boiler (or microwave), melt the chocolate and coconut oil until smooth. Dip strawberry and place in fridge for 5-10 minutes until chocolate is set.
Step 4: Assemble & Enjoy!
Once cupcakes are completely cooled, top with chocolate frosting and top with chocolate covered strawberry. You can also add additional melted chocolate for garnish. Enjoy!
