Low Sugar Hot Cocoa Cookies
There’s nothing better than cozying up with a cup of hot cocoa—unless, of course, you turn that nostalgic flavor into a cookie! These Low Sugar Hot Cocoa Cookies are here to bring all the chocolatey, marshmallowy goodness of your favorite winter drink into a sweet, shareable treat. With just the right balance of rich cocoa, melty chocolate chips, and fluffy marshmallow bits, these cookies are perfect for holiday gatherings, gifting, or a little self-indulgence (you deserve it). So preheat the oven, grab some Pyure hot chocolate mix, and let’s bake up some magic!
Ingredients:
- 1 cup unsalted butter
- 1 egg
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/2 cup mini chocolate chips
- 2/3 cup mini marshmallow bits
- 1 1/2 tsp vanilla
- 1/2 cup Pyure Chocolate Drink Mix
- 2 1/2 cups flour
- 1 tsp salt
Instructions:
- On medium speed, combine butter, brown sugar and sugar in a mixing bowl until creamy and fluffy.
- Next add your egg, vanilla, salt and Pyure hot chocolate mix. Mix until just combined then add in your chocolate chips and marshmallow bits. Use a paddle attachment on low to fold in.
- Slowly add in your flour until it is all added. Mix on medium until it is starting to combine then use a spatula or your hands to finish folding in everything together evenly.
- Roll between parchment paper and chill until firm. Preheat oven to 375 F. When your dough is firm, cut out your shapes and freeze until firm once more before baking. Bake for 8-9 minutes or until there’s no sheen from the butter.
- Let cool on a cooling rack. For looks, and additional texture, feel free to add more marshmallow bits by gently pressing them on top of the cookie before decorating.
