Ingredients

1 cup softened unsalted butter
2 eggs
1 cup Pyure Granulated Sweetener 
1/2 cup Pyure Brown Sugar 
2 tsp vanilla extract
3/4 tsp salt
2 tsp cream of tartar
1 tsp baking soda
3 cups flour
Cinnamon Sugar ( 1/3 cup sugar, 2 tbsp cinnamon)

Instructions

1. Beat your butter and granulated sugar until creamy and fluffy. Followed by your brown sugar, salt and eggs. Mix again to combine.
2. Add in your vanilla, baking soda and cream of tartar just until combined. 
3. Add a cup of flour in at a time until a dough starts to form, your dough should not be sticky, but slightly tacky. If it is still sticky/wet after 3 cups of flour, add a tsp of flout in at a time.
4. Roll your dough into balls, for bigger bakery style cookies, weigh each ball at 3 oz. to make 12 cookies.
5. Set your dough balls aside and in a smaller bowl, mix your granulated sugar and cinnamon and mix. Roll your dough balls in the mixture, then freeze until firm. Anywhere from 15-20 minutes, covered.
6. Preheat your oven in the meantime for 350 F. Take your cookies and place onto a baking sheet 2-3 in apart (if making bigger cookies) and bake for 10-12 minutes. If making larger cookies, additional time may be needed anywhere from 1-2 minutes extra.
7. These cookies will be super soft and airy when out of the oven. Leave them on the baking sheet until completely cooled. Snicker Doodles are known to spread, if you had lots of spreading, your cookies may have been too close together and/or they were not firm enough before baking.
