Homemade Rocket Popsicles
No-Sugar Lemonade
- 6 cups water, divided
- 1 cup Pyure granulated sweetener
- 1 cup fresh-squeezed lemon juice
Red Layer
- 1 cup strawberries, fresh or defrosted *can also use a mix of raspberries, cherries or any other red fruit
- ⅓ cup homemade lemonade
- ⅓ cup plain yogurt *can also use plant-based yogurt if desired
- 1-2 teaspoons Pyure granulated sweetener
White Layer
- ⅔ cup homemade lemonade
- ⅓ cup plain yogurt *can also use plant-based yogurt if desired
- 1-2 teaspoons Pyure granulated sweetener
Blue Layer
- ½ cup blueberries, fresh or defrosted *can also use a mix of blackberries or any other blue fruit
- ⅓ cup homemade lemonade
- ⅓ cup plain yogurt* can also use plant-based yogurt if desired
- 1-2 teaspoons Pyure granulated sweetener
Instructions
Make the Lemonade
- Combine 1 cup water and 1 cup sugar in a small saucepan. Place over medium-low heat and stir until sugar is dissolved. Remove from heat and set aside, allow to cool for 10 minutes.
- Pour 1 cup fresh-squeezed lemon juice into a pitcher. Add sugar/water mixture (simple syrup).
- Add remaining 5 cups of water and stir well. Transfer to the refrigerator and allow to chill.
Make The Red Layer
- Combine the strawberries, lemonade, yogurt, 1 teaspoon of sugar in a blender and puree until smooth. Taste and add more sugar if needed.
- Pour evenly into 12 popsicle molds, then insert wooden popsicle sticks and freeze until solid, at least 2 hours.
Make The White Layer
- Combine the lemonade, yogurt and 1 teaspoon of sugar in a blender and process until smooth. Taste and add sugar if needed.
- Pour evenly over the frozen red layer and freeze until solid, at least 2 hours.
Make The Blue Layer
- Combine the blueberries, lemonade, yogurt, 1 teaspoon of sugar in a blender and puree until smooth. Taste and add more sugar if needed.
- If desired, strain to remove the skin, then pour evenly on top of the frozen white layer. Freeze now for a minimum of 4 hours, but preferably overnight.
- To unmold, run the mold under warm water for a few seconds to loosen the popsicles.
- Store leftovers in the freezer and in their molds for up to 2 weeks.
