Ingredients

Muffins

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/3 cup Pyure Granulated Sweetener
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon poppy seeds
  • Zest and juice of 1 whole lemon

Frosting

  • 4 ounces unsalted butter
  • 1 tablespoon lemon juice

  • 2 tablespoons heavy cream

Directions

  1. Preheat oven to 350°F and line a muffin tin with cupcake liners.
  2. In a large bowl, combine all muffin ingredients and mix until smooth.
