High Protein Cinnamon Buns


Soft, gooey, and honestly just as good as classic ones. 

Each bun comes in at ~7g protein and ~185 calories.

Ingredients (makes 8 buns):

  • 1 1/4 cup cottage cheese

  • 2 tbsp Pyure Organic Maple Flavored Syrup

  • 1 tsp vanilla extract

  • 1 3/4 cup all-purpose flour

  • 2 1/2 tsp baking powder

Filling:

  • 1 1/2 tbsp unsalted butter, softened

  • 1/4 cup light brown sugar

  • 2–3 tsp cinnamon

Icing:

  • Reserved 2 tbsp cottage cheese mixture

  • 2 tbsp Pyure Organic Monk Fruit Sweetener

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. In a blender, blend cottage cheese, maple syrup, and vanilla until smooth. Set aside 2 tbsp of this mixture for the icing.

  3. In a bowl, combine flour and baking powder. Add the blended mixture and mix until it forms a soft dough.

  4. Roll the dough out into a rectangle on a lightly floured surface.

  5. Spread softened butter over the dough, then sprinkle evenly with brown sugar and cinnamon.

  6. Roll tightly into a log and slice into 8 equal rolls.

  7. Place rolls into a lined or greased baking dish and bake for 15–20 minutes, until lightly golden.

  8. Mix the reserved cottage cheese mixture with monk fruit sweetener to create a smooth icing.

  9. Drizzle over warm buns and enjoy ✨
